I am not as impressed as other people WITH AN UPDATE
These are nice-looking knives. The Damascus is an artificially etched thing, which I knew going into the purchase. Thatâs not a big concern. The steel is good, but not the very best. It is a budget steel that generally provides good value, but like anything, you get what you pay for. But the thing that I donât like (at all) is the butt is the knife (aka, the pommel). It is not the same size as the handle, so it gives a poor fit and finish to the knife. If you look at the attached picture, the guitar pick points to my area of frustration. When you hold the knife, it is not a smooth finish from the handle to the pommel. The Pommel juts out slightly with sharp edges.Part of the problem is the handles. They are decent looking, but not carefully crafted. On the paring knife, the wood is roughly finished. I have been regularly using mineral oil on them to ensure a smooth, moist finish without shrinkage. But it hasnât helped improve what started as poor workmanship.As far as the blades go, they are decent. They are not exceptionally sharp and haven’t held a razor edge over multiple uses. The CrMoV (Chrome-Moly-Vanadium) is a Chinese steel that is used quite extensively in knives marketed in the ‘value’ category. The steel is respectable in corrosion resistance. It is on the lower end of edge retention, and conversely, it scores high in its ease of sharpening. My experience with these is that I have had to sharpen more frequently than most reviews suggest.I am ok with my purchase, but not thrilled.UPDATE: ****BONUS STARS FOR CUSTOMER SERVICE****I wrote what I believe is an honest review about these knives, including a 3-star rating — good but not great. A few days later, I received an email through Amazon from the customer service department at Paudin. They apologized for not living up to my expectations. They said they wanted to make it right and would revisit their inspection practice. I replied that I would continue to use the knives and hadn’t expected them to do anything. They chose to refund my money for the purchase. It was impressive to have a transaction with a company that PROACTIVELY stands behind its product. I have now changed my rating to 4 stars based on a product that is of reasonable quality, good-looking, and I enjoy using…and because of Paudin’s rare and thoughtful approach to customer satisfaction. As a side note, I also purchased the 12-inch carving knife that has a good fit and finish. I used it last night on a smoked flank steak and it cut perfectly. Thanks, Paudin.

Cuts tomatoes like buttah!
I got this knife as a gift & didnât expect it to work as well as my Wustoff or my Henkels, but itâs now my favorite knife Iâve ever had! Itâs super sharp & I rarely have to sharpen it. Itâs lighter weight & feels more balanced & is easier to handle than my other chefs knives. I love mine so much I bought another one for myself AND a set of 3 for my son-in-law since he does most of the cooking. Iâm sure heâll be as surprised as I was at how great these knives are!

Purchased as a birthday gift for my hubbie, a new cook and meal smoker. He has loved this knife since he saw the package. Uses it for everything – slicing cooked meats (which it does beautifully) as well as buttering his toast (not quite so successful). I think he would wear it on his belt if it came with a case.Really nice knife. He is enjoying it enormously.

These appear to be a generic Chinese product that several other sellers also rebrand as theirs and sell them on Amazon. It uses the same spec German steel but is manufactured in China.The handles feel a bit budgety other than that, they look nice. They are indeed sharp and Nakiri knife has a slightly curved edge which makes shredding, dicing etc. very easy to do. They are quite light but having said that my previous knives were way too heavy, these seem far easier to control.You will need to store these in some sort of block or magnetic holder otherwise you will more easily dull the edge or worse, cut yourself if you just store them in a draw with other things.They say they will replace them for a lifetime, if that is the case, that lifts them above other brands. I paid just under £60 for these, they do vary in price to don’t pay more. Of course you are likely to be able to get the exact same quality knives from other sellers, as mentioned earlier, for less. I choose these as they have been reviewed by external sites so Paudin do seem to want to build a reputation.Time will tell how they hold up but these are overall very good knives, currently cut brilliantly, and at a reasonable price point. For normal household use I see no point spending anymore money for your knives, these will do the job very nicely. For heavy use or non domestic use, you may wish to look at proper Damascus steel, which costs quite a bit more.

I first tried this knife at a friend’s house when we were cooking and I absolutely fell in LOVE with them to the point I wanted a set of my own. I hate using bad/dull knives for anything (especially squishy veg like tomatoes â aka:fruit) and these come amazingly sharp, and make you feel like a pro chef.Just keep in mind that the best long-term thing is to look after them i.e. do not wash them in a dishwasher, and keep sharpening them every once in a while.
