Beautiful Knife Set
Not like any Damascus knives Iâve seen previously. I get the sense that the Damascus is purely decorative to get the tidal wave effect. That said the knives are beautiful, very sharp, the edge is holding well a couple months in and the handles are stunning and unique. The knives are very functional, good to look at and have added to the kitchen experience.Update: I still like the knives very much but have learned a hard lesson. The cleaver needs to be treated more delicately than I would have expected. I spatchcocked some poultry recently and the ribs chipped and ruined the cleaver blade. The manufacturer was responsive and indicated they try to communicate proper use of that tool but I never saw it. Your expectations of a cleaver might be different from mine but just be awareâ¦probably not the best choice for rougher use.

Good for a Home Kitchen
I bought the Senken Tidal Wave knife set with the blue handles. They look great, both in the knife holder and out of it. I do believe that they are quality Damascus steel, and vg10 steel is quite good. Up until recently I have only used them in my home kitchen. I decided to put them to the test at a friend’s restaurant. I tested the 10-in and the 8-in chefs two separate days. They each worked beautifully, while I cooked and cut up about 120 lb of chicken and beef each day. I have a honing rod which I used occasionally to bring back the sharpness, and that worked very well. However, when I got home and examined the cutting edge of the 8-in chef knife, I noticed there were several nicks. While I was working with a knife it did not affect the cutting ability. Perhaps because of the hardness of the vg10 steel it is prone to chipping, and the 15Â° cutting edge is also a very fine edge, which may not take much abuse. The nicks are easy enough to work out on my wet stone, it’s just not good to see that on a quality blade. The restaurant owner used the knife and said it was fantastic.Overall I am very pleased with the set, especially since it’s main use from now on will be in my home kitchen. But be careful on Bones and anything that is frozen, to avoid chipping the blade.

So freaking sharp
I accidentally *touched* (barely) one of the blades as I moved the knife block and it sliced my finger right open. Be cautious! They are extremely sharp. Husband absolutely loves them.

Impressive
I haven’t used them a whole lot yet, but wow they are so sharp I cut myself without realizing it. I really had no idea how dull my past set was, till I tried these out. The quality is impressive and beautiful. Even the quality of the box it came in is so nice I don’t want to through that out (remove the knives). I loved how every knife comes with a protective sleeve. I just need to find a quality holder that keeps them protected while allowing me convenience to use them (the suggested marble slab didn’t work out); but until then I’ve got the nice box.
